About the role:


We currently have an exciting opportunity to join our Hospitality Team here at London Stansted Airport. We operate the unique brand – Escape Lounge where passengers can relax and enjoy our hospitality service before they board their flights.

In this role you will manage and lead the operational delivery of the F&B kitchens to ensure they attain the highest professional standards, culinary excellence and comply with all legislative requirements including compliance with health and safety legislation and food hygiene legislation.


You will be responsible for the Lounges and/or F&B units’ day to day kitchen operations; supporting the achievement of budget targets by effectively performance managing your  on-shift team and direct line management of assigned colleagues.


You will Control and direct the food preparation process and any other activity relating to purchasing, liaising with suppliers, stock control, waste management and menu development.




Principal Accountabilities:


  • Supporting the Lounge General Manager in managing the kitchen team on a daily basis and ensuring staffing levels are in line with budget and outturn.
  • Understanding the budget and outturn targets as well as monthly P&L results and drive corrective actions where needed  
  • Supporting the General Manager in achieving the revenue and EBITDA targets
  • Supporting the General Manager in achieving the business objectives
  • Kitchen management responsibility operating 365 days per year, often for 18 hours per day.
  • Balancing hands-on cooking time with administration requirements and team development. 
  • Responsible for ensuring the requirements for food hygiene are implemented and instilled in the team.
  • Responsible for all operational requirements including, (but not exhaustive), appropriate staffing levels against business volume, deployment of team members, appropriate rotation of staff to ensure skill maintenance.
  • Working with the Duty Managers and responsible for efficient stock ordering, stock control, invoicing and ensuring receipting of deliveries are managed and recorded daily in line with MAG policy. This also includes rotation, storage, storage checks and that all waste is recorded daily and monitored. Any wastage concerns to be investigated and shared.
  • Monitor cooking, chilling, labelling, storage and rotation of food, keeping required records and taking appropriate action where necessary to ensure compliance with HACCP procedures and food hygiene regulations.
  • Accountable for the correct ordering of stock, ensuring adequate stock is maintained whilst carefully managing costs to minimise value held.
  • Accountable for processing and managing the supply invoices for the lounge in line with MAG policies and procedures, ensuring values are within the approved sign off limit.
  • Accountable for ensuring staff are fully engaged with the kitchen operation and MAG as well as maintaining effective relationships with TU representation.
  • Responsible for constant performance management of colleagues, wrapped in the formal process of completing MAG performance development reviews and objective setting for direct reports.
  • Coach and develop the team across all MAG hospitality units and support the compliance manager to ensure all training is completed and maintained within timeframes set for both yourself and the overall team.
  • Ensure regular 1. 2. 1 meetings are held with the direct reports and minutes from the meeting are shared with the lounge General Manager. Six Monthly performance reviews are completed with all team and targets assigned and monitored.
  • To assist with the preparing of staff rotas, timesheets and absence administration.
  • Collaborate with the hospitality management team to continuously improve the customer offering.
  • To follow all procedures on energy conservation and carbon reduction targets
  • Responsible for any other reasonable requests as designated by management
  • Flexibility in relation to working hours is required with no set working pattern.



Knowledge, Experience and Skills:


  • A solid background in the hospitality sector, with a proven track record of high-volume environments.
  • Experience of managing high-volume kitchen teams either in house or via contracted providers.
  • Analytical skills with a solution orientated approach to deliver on budgets.
  • A solid understanding of the market.
  • Successfully managed budgets, capable of prioritising spend, driving profit and identifying cost efficiencies. 
  • Computer literacy on mainstream PC applications including Microsoft office.
  • Ability to lead, inspire and motivate a diverse team with fairness and empathy, having courageous performance discussions as appropriate. Able to create and implement economically sustainable solutions to the benefit of the Client and MAG.
  • Able to create a culture of results within a high-pressured environment through a strong team spirit, instilling a hunger to be part of a winning team. Is highly organised in working style, prioritising, scheduling and delegating with skill.
  • Takes ownership, is committed to achieving growth by creating a culture of innovation commitment and engagement.
  • Food Hygiene level 3 or above would be an advantage.
  • Know the key principles of risk assessment and how to identify, plan for and minimise risks to the service and operation.
  • Must be flexible to work on a shift basis between the hours of 0300-2200
